Lowering a sloping, uninsulated bathroom ceiling

How do I lower the sloping ceiling in my bathroom using insulated plasterboard? Can I just use battening to bring it down to the level of the tiles?

Yes if the battens a thick enough to fit and be secured into the roof joists, or build a timber frame and secure to wall.

I would use Celotex cut between rafters allowing a 50mm air gap over, then 50mm Celotex under rafters, then battens to make the fixing of plasterboard easier.
I would not use the insulated plasterboard as the insulation is usually expanded polystyrene being of a lower heat resistance. Celotex will cost more but its a better product or you can use Kingspan.
